MEXICAN STREET CORN ON THE BLACKSTONE GRIDDLE | ELOTE | BLACKSTONE GRIDDLE RECIPES

This is how to make Mexican street corn or Elotes on the blackstone griddle. A super easy cook and a great Blackstone griddle recipe. Great side dish to go with tacos! Warm that corn up nice and good. I had my grill around 375. Add salt and pepper to taste. Add about a quarter cup of mayonnaise, 3 tablespoons of parkay butter and Add about three heaping tablespoons of sour cream. I put in about 2 tablespoons of cotija cheese and then Add 2 tablespoons of chili powder and mix together real well. I would let that cook up together for about five minutes and then put it in to a large serving bowl. Add some more sour cream and parkay butter over the top then more cotija cheese, chili powder and cilantro on top.
2 bags sweet corn
Mayo
Chili powder
