This Is how to make fried potato salad on the Blackstone griddle. This just became my favorite side dish recipe and it’s another awesome blackstone griddle recipe! This recipe is a copycat of the Cajun fried potato salad at Fatty’s Pub in Dekalb, Illinois right by NIU. This isn’t the same as theirs but is a delicious fried potato salad recipe! Get the griddle nice and hot, then add a decent amount of oil and spread it around. Add the cubed potatoes and throw some more oil over the top of them. You want to keep adding oil here and then to do a “shallow fry “. The amount of potatoes I used only took about 10 mins to cook.
5 cubed up russet potatoes (need at least 15 potatoes to use up all the sauce)
~fried potato salad sauce~
2 red and green bell peppers cut into chunks
1 sweet or white onion cut into chunks
3 stalks of celery
Process these together very well and let them drain all the juices
1 tbsp dill weed
2 tbsp granulated sugar
2 tbsp Cayenne pepper
6 tbsp blackstone crazy Cajun seasoning
Mix together very well
2 cups dukes mayonnaise
Mix this all together and that’s it!
