This is how I made a delicious low carb breakfast egg in a tomato hole. Another great blackstone griddle recipe that was a super easy breakfast recipe and very low on carbs. Remove the inside of the tomato leaving just a ring, then mix that tomato with the eggs. Fry up the veggies you like and combine it with the egg mixture and scramble. Use a spoon to scoop the egg mixture into the tomato rings and cover. When ready, flip and it’s time to eat! You can still add some bacon or sausage and it will still be low carb!
1 tomato cut into 4 slices
3 eggs scrambled
1/3 of a medium sized white onion minced
1/2 of a large jalapeño minced
Salt and pepper to taste
