We had to do it! We were headed out riding, we wanted to make a video and we wanted lunch! We prepped and packed everything on the ATV’s and cooked at the top of jericho mountain in Berlin NH. Fun ride up, great meal and incredible views!
Most of the ingredients are self explanatory other than the tzatziki and the meat.
The meat was frozen, we bought it at a local restaurant supply store. The tzatziki is Nate’s recipe. Listed below.
1 32oz tub of whole fat Greek yogurt
2 large cucumbers peeled
1/2 of a fresh clove of garlic
2 tablespoons of mayonnaise
Using a colander and cheesecloth (or coffee filter) strain the yogurt over a bowl or in the sink for an hour or 2. This removes excess moisture and makes it thicker.
Grate the peeled cucumbers using the large side of a box grater. Grate it into a double layer of paper towels or a layer of cheese cloth. Gather the cloth into a ball and squeeze as much liquid from the shredded cucumber as possible. I mean SQUEEZE that shit like no tomorrow!
Add the grated/drained cucumber, strained yogurt and mayo to a large mixing bowl. Use a very fine grater to grate 1/2 to 3/4 of 1 garlic clove into the mixture. Mix thoroughly and let cool in the fridge.
