We love breakfast for dinner here at our house. So when I asked my little girl to choose between breakfast for dinner or pork chops, she chose breakfast!
Many have asked from one video about my pancake recipe. Well, here I’ll post my recipe below.

Hungry Hussey Pancakes
2 cups AP flour
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
2 tablespoons melted butter
1 3/4 cup buttermilk
1 tablespoon sugar (add another 1/2 teaspoon to 1 teaspoon or more if you like a sweeter pancake)
1 – Place dry items in a bowl, mix. Sieve flour if you desire. I’ll do it only if time permits.
2 – Combine beaten eggs, with the other wet items and mix well.
3 – Add wet mixture into the dry mixture, a little at a time, until mixed well. Don’t mix a lot, just until incorporated.
4 – Place this mixture in the fridge for 10 mins before cooking. I’ll mix this well, then get the griddle ready, etc. It can sit longer too, just at least 10 mins. This is when the “action” happens.
5 – Griddle on a medium heat (350° see IR gun link below for temp measuring) on your griddle or pan for 2-3 mins each side. Look for the edges to curl or firm up with bubbles on top, then that’s a sign it’s ready to flip.
6 – I like to top each when done with a pat of butter.
7 – Enjoy with your favorite syrup.
